Pellicano's Jamaican Jerk Seasoning

Sweet Heat and Complex Caribbean Warmth

Pellicano’s Jamaican Jerk Seasoning is a dry rub designed to replicate the signature flavor of true Caribbean jerk. The essence of jerk lies in a sophisticated combination of fiery heat and sweet, aromatic spices. This blend provides the essential foundation, allowing the user to add fresh aromatics (like Scotch bonnet peppers, scallions, and ginger) if desired, or use it alone for a potent dry rub.

The complexity of this blend is key to achieving authentic jerk flavor:

  • Sweet and Savory: Sugar and Salt are balanced to aid in the formation of a rich, mahogany crust during cooking while providing a foundational taste.

  • Warmth and Aroma: The blend of Spices (which traditionally includes allspice, thyme, cinnamon, and nutmeg) delivers the signature complex, sweet, and warm aromatics of Caribbean cooking.

  • Color and Visual Appeal: Paprika and Caramel Color contribute to the deep, appetizing color of the finished "jerk" crust on meats.

  • Intense Flavor Base: The dry mix provides intense, concentrated flavor that penetrates deep into the meat during marinating and cooking.

Essential for Grilling, Smoking, and Slow Cooking

Jerk seasoning is traditionally used for proteins destined for high-heat grilling or low-and-slow smoking:

  • Chicken: The classic application, used as a marinade or rub on bone-in chicken pieces before grilling or smoking.

  • Pork: Excellent on pork shoulder or tenderloin, creating a spicy, aromatic crust.

  • Seafood: Applied to firm white fish or shrimp before quick grilling or sautéing.

  • Vegetables: Used to season grilled corn, sweet potatoes, or grilled pineapple for a sweet-heat contrast.

  • Wet Paste: Can be easily converted into a wet marinade by mixing with vinegar, oil, soy sauce, and fresh ginger/garlic.

Fun Fact: The History of Jerk

The jerk method of cooking originated with the Maroons, communities of Africans who escaped slavery and settled in the mountainous regions of Jamaica. They utilized local spices and a unique method of cooking meat over pimento wood fires in earthen pits. The signature spicy-sweet flavor was developed to both season and preserve the meat. The word "jerk" itself is believed to derive from the Spanish word charqui, which referred to dried meat (and is the origin of the English word jerky).

Easy Recipe: Classic Jerk Chicken Rub

Use this dry rub for grilling chicken breasts or thighs for an instant Jamaican flavor.

Ingredients:

  • 4 Chicken Thighs or Breasts

  • 2 Tbsp. Pellicano’s Jamaican Jerk Seasoning

  • 1 Tbsp. Olive Oil (Optional, for binding)

Instructions:

  1. Prep: Pat the chicken pieces completely dry. For a wet rub, combine the seasoning with the Olive Oil to form a thick paste. For a dry rub, use the seasoning directly.

  2. Rub: Apply the Jerk Seasoning liberally and evenly over the chicken, pressing it firmly into the meat.

  3. Marinate: For best results, cover the chicken and refrigerate for at least 4 hours, or overnight, to allow the sweet and savory components to penetrate the meat.

  4. Cook: Grill, bake, or smoke the chicken until fully cooked. The sugar in the rub will caramelize, forming the desirable dark, flavorful crust.

Ingredients: Sugar, Spices (including Paprika), Salt and Caramel Color. Contains up to 51 PPM Sulfates.
